The Christmas Side 2 (Black Forest Cupcakes)

Merry Christmas! I set my mind on making a Christmas sweet that I could serve for today’s Christmas dinner party, so it had to be somewhat traditional, that I could make ahead of time, that was easy, fast and not so expensive. Honestly I guess I spent more time thinking about how to make it fast than actually doing it, so success. Black Forest Cupcakes are the shit!

Black forest is one of the first recipes I’ve tried, even still a child. It’s quite easy, you can’t really go wrong with it, and it’s such an old recipe that I think it’s traditional enough for Christmas. If people actually do it for Christmas or not, I don’t know, but chocolate is christmassy enough for me. The ingredients are pretty basic, so if I have them at home, I don’t have to spend so much extra money on baking, that I already spent on the dinner’s main course. And to top it off, I took around 40 minutes to have the plain cupcakes done and cooling off. The decorations took a littler longer because I was watching youtube videos while making them, but if you really are in a rush you can just buy candy canes and put them on top of the cupcakes. If you are reading this right now,maybe you are in a rush to make something for dinner, so let’s get to it.

Here’s what you’ll need (makes 22 cupcakes)

  • 150 g of unsalted butter
  • 150 g of melting chocolate
  • 150 g of caster sugar
  • 6 eggs
  • 150 g of all purpose flour
  • 1 tbsp of baking powder
  • 400 ml of heavy cream
  • 4 tbsp of powder sugar
  • 150 g of cherry jam
  • red and white fondant or store bought candy canes (for decoration)

Here’s how you do it:

  1. Met the chocolate using the microwave or over a double-boiler (bain marie).
  2. In a bowl, cream the unsalted butter until it’s softer and puffier. Add the melted chocolated and beat until it’s a creamy mixture.
  3. Add the caster sugar and the eggs yolks one by one. Mix until combined.
  4. Add the flour and the baking powder.
  5. In a separate bowl whisk the egg whites until they are white and form soft peaks. They will be done when you can turn the bowl to the side and the egg whites don’t fall apart.
  6. With a spoon in a circular motion involve the whites into the chocolate mixture.
  7. Line a muffin tin with cupcake liners, and fill them with the batter until they are up to 2/3 of the top. Use a serving soup spoon it makes it quite easier.
  8. Bake in an oven at 180 C for 18 minutes. Take it out and let it cool completely.
  9. In a bowl, add the powder sugar and cream and whisk until the whipped cream is firm enough to form firm peaks. It will take around 10 minutes whipping with an electric mix. They will be done, when you take whisk out of the batter a peak forms and it doesn’t fall apart.
  10. With a knife, make a little circular dent on the top center of the cupcake and fill it with about 1 tsp of jam. The depth and diameter of the cavity should be around 1cm x 1cm, roughly. You are gonna cover it up so don’t worry so much.
  11. With a spoon, add a dollop of whipped cream to the top of the cupcakes, and using a knife smooth it all over the top.
  12. Using red and white fondant, you can roll them into small strips and shape them into candy canes. Or buy the candy canes already made. Put them on top of the cupcakes and Voila!

Ok that was fast or what? This is really easy too. You can keep the whipped cream in the fridge, and do the decorations just before you serve them if you prefer. I have a bit of a problem transporting my cupcakes, so I’ll be doing the rest of the decorating just at the dinner party. Being simple is a plus since I don’t want to be in the kitchen for ages, while the rest of the people are having fun.

So I was lucky enough to find really cute Santa Claus cupcake liners in a pastry store just right by my house. I was gonna go for plain red ones, I think that would be festive too, so I wouldn’t worry so much about that. If you are reading this, and still don’t know what to do for dessert today, give it a try, I think it will go well enough. If you don’t have candy canes or fondant, just sprinkle some red sugar on the cupcakes, or some golden stars, or whatever really. If they taste good who cares?
