End of the month right? Guess most of us are totally broke around this time, and I’m not an exception, definitely. So when it comes to cooking it’s kinda awesome if you can bake something using mostly items you already have around the house and spare some bucks. So I managed to bake Banana Cupcakes with Devil’s food frosting.
In my case, I just had to buy the eggs, bananas and chocolate, nonetheless this recipe uses really really simple ingredients, so even if you have to buy most of the ingredients I’m quite sure the costs are still gonna be pretty low.
This recipe was an adaptation of two recipes found at Nigella Lawson’s website. Honestly I do go back to her a lot, since she tends to have pretty easy recipes and as I have tried a lot of them I always trust her when it comes to getting flavorful results.
Super awesome facts about this recipe : 1) No electric beater needed, a fork is totally enough (so also friendly on your electric bill!Ah) 2) it’s so fast to prepare the cupcake batter, really 10 minutes and it’s done. You spend more time waiting for these babies to come out of the oven, and waiting for the frosting to solidify than actually doing something. Pretty awesome right? I’m so lazy, damn!
Here’s what you need:
For the cupcakes:
- 3 medium very ripe Bananas
- 125 ml vegetable oil
- 2 large eggs
- 100 grams of caster sugar
- 250 grams all purpose flour
- 1 teaspoon bicarbonate of soda
For the Frosting:
- 125 ml water
- 30 grams caster sugar
- 150 grams butter
- 300 grams dark chocolate
And here’s how you do it:
1) Pre-heat the oven to 200 C.
2) Break your pealed bananas into a medium bowl and with a fork mash it until you get a baby food like pure. It will have some chunks, don’t worry about it, that’s a good thing.
3) Add the oil and eggs to the banana pure and mix it. Add the sugar, flour and baking soda and mix until you have an homogeneous batter.
4) Put in the oven for around 20 minutes. By the time they are ready, they should have a little crack on top and if you pick them with a toothpick, it should come out dry.
5) By the time the cupcakes are baking, start with the frosting. First chop the chocolate into small cubes. In a small pan, put the water, sugar and cubed butter. Heat it on the stove until it’s boiling.
6) Take the pan out of the heat and add the chopped chocolate. Let the chocolate melt without stirring, let it just sit for around 2 minutes. After this gently stir, until it’s all combined. At the end, you should have a fairly liquid glossy chocolate frosting.
7) Let the cupcakes cool down as well as the frosting. Stir the frosting once in a while, so it doesn’t form a crust on top. This is what takes longer, the frosting to have a spreadable consistancy will have to cool down almost totally, and this will take around 30 to 40 minutes.
8) You’ll know the frosting is ready to spread when you stir it with your spoon and it holds it’s shape. So now, we can prepare our pipping bag with the tip of your choosing, and put the frosting inside. Wrap it up at the top so it doesn’t spill all over you when you squeeze it (yes it happens!) and decorate the cupcakes to your liking. I just did a regular swirl. If you don’t have a pipping bag, just spread the frosting on top of the cupcakes with a knife, they’ll look and taste awesome too!
So I spent around 10 TL (aprox 5 usd) for this recipe, since I had all the other ingredients. So mission accomplished and I can pat myself on the back. Yey! And they taste so much like banana and they’re so sweet! It’s an amazing thing to have with dark unsweetened coffee, or any other way, really.
