The soup side

Winter has come and my nose decides it’s the official time to be runny and disgusting! Omg super cool ! Ok I’ll stop with the sarcasm. I’m sick for like a week now and it’s super boring.

And what’s not boring you ask? Is that it gives me an excuse to cook up some soup, and be fat and happy with a gigantic bowl of it warming up my stomach, while binge watching The Mindy Project from my super uncomfy couch!

So let’s get to it. You’ll need:

  • 2 onions
  • 1,5 kg of carrots
  • 4 tomatoes
  • 200ml of cream ,unsweetened
  • 200ml of tomato puree or tomato sauce (in here (turkey) this one is tomato puree, in Portugal too but accourding to google what I mean here is tomato sauce)
  • Around 2L of water
  • salt
  • 2 cubes of chicken stock
  • olive oil
  • Kaşar Cheese or Cheddar Cheese

And you do it like this:

1) Start boiling your water so you can add it later to your pan and leave it there while you prepare the rest.

2) Chop your onion into rough pieces, they don’t have to be super small, nice chunks it’s enough. Put them in a big enough pan to take all the soup, add a bit of olive oil and cook them until they’re a little golden and smelling nice.

3) While you are cooking the onions start cleaning the carrots and take their skin off. This is easier if you have a vegetable peeler. If you don’t, just scrape the skin of the carrots with a knife, it works and it’s easy. Chop the carrots into not so small pieces and put them in the pan.

4) Cut the tomatoes in 4 pieces and put them in the pan.

5) Add the water and the chicken stock cubes. Add some salt to season the soup.

6) Cover and let it boil for around 2 hours (Yeah, if you don’t have one of those fancy pressure cookers carrots will take forever to cook.)

7) When it’s all nice and soft (if the carrots are soft everything else is soft, believe me.) take it off the heat and blend it.

8) After blending add the cream and the tomato sauce and mix.

9) Take back to the stove to reheat and mix all the flavors.

10) Serve with a bit of grated cheese on top that will melt into the soup and make it even more delicious!

This recipe makes around 2L of soup which would last for 4 meals or so if you don’t eat it like a mad person, like I do. Me and a friend, finished this soup in 2 meals so there you go, it shoul be good right?

FWOI group is always the best 😀 I found it in Şok Market first but you can find it everywhere actually even in tekkels, they call it Krema, and it’s exactly cream, I use it to whip too and it works.
